Smoke these Jalapeno Poppers for your next Backyard BBQ or Dinner (Bonus points if you use smoked cream cheese.)

- Get the smoker up to 275-300
- Wash and clean the insides of the jalapenos. Slice off the tops of the peppers and remove seeds and veins. (All the heat from the pepper comes from seeds and veins -- remove to your desired heat level.)
- Slice off the top 1/3 of the pepper (Use the above photo as reference.)
- Make a mixture of cream cheese, meat if desired (you can use brisket or chuck or whatever you like) and shredded cheese -- combine into a filling
- Take filling and stuff peppers
- Wrap stuffed pepper with bacon
- Place peppers in aluminum tray and place in smoker
- Smoke for 3 hours or until the bacon is crispy
- Once you get close to the desired bacon crispness take smoker or grill to 350 for 10 more minutes
Plate and serve

Don't snooze on making some hot and fast pork belly in your backyard. Smoke the pork belly and then finish it off over fire to serve in your backyard.

- Remove the top layer of skin from your pork belly
-  Pre-heat smoker to 250 degrees
-  Season Pork Belly with seasoning of choice – making sure you hit all sides
-  Smoke at 250 to 160 degrees internal temp
-  When close to 160 — pre-heat grill or oven to 400
-  Grill pork belly 3 minutes per side (or 5-7 min per side in oven)
** Watch the pork belly on the grill to make sure you do not get any grease flares. We recommend grilling with the top open **
- Let rest, Slice and Enjoy

Pork belly is perfect with any meal and a staple of the BBQ world.
