Making The Perfect Burger

What makes up the perfect burger on the grill?

The perfect burger…does it really exist? This is one topic every backyard BBQ and grilling expert has an opinion on (and they’re not shy of voicing their opinion.)

To me, when I think of burgers and what makes a really good burger — I think about two things: consistency and dressing. I have a feeling I am getting too subjective here, and this may be a to each his (or her) own — but to me, it comes down to consistency and the dressing of the burger.

Let’s get into it…

Consistency of the perfect burger

I like 1/3 to 1/4 lb burgers that keep their shape. I am not a fan of Smashburgers or real thin patties. I prefer something with a little substance. Give me a nice round burger with a little thickness and I’m quite content.

When I make burgers, I like to use minimal ingredients. Maybe some steak sauce, salt & pepper for seasoning — but nothing too crazy. Typically, I like to season when I am making the beef mixture and then again on the grill.

To make sure I get a perfect round patty I use a potato masher to press my burger from it’s previous meatball shape. This can be done either on parchment paper on a plate or when I throw it on the flat top grill surface.

And, while we are at it, medium rare is the way for me…

The Dressing of a Burger

This is 100% subjective and often depends on how I feel that day. But, lettuce, tomato, pickles, onions, ketchup and mayo on a brioche bun is my standard go to burger combo.

When constructing the perfect burger don’t forget the bun. A good bun does wonders for the burger. But remember, a good bun can’t cover up a shitty burger.

One last thing to mention is I like to cook my burgers on the grill on a cast iron flat top. Flipping only once, the flat top helps ensure a perfectly cooked burger to temp every time.
